Pan de Cristal
A 1/2 loaf of ciabatta-like bread with an open crumb and crystal like structure on the inside – when eaten it shatters like glass! If you have visited Barcelona or the Catalonia region of Spain, you may have tasted pan de cristal, which translates to “glass bread”. There are many things that make this bread so special, but the main difference is that the crust is thinner, crispier, and more delicate than a loaf of regular bread. Use for the classic pan con tomate dish or for sandwiches!
