Sofrito is made by slowly roasting tomatoes with 100% Spanish olive oil for hours, creating a rich, flavorful sauce that adds layers of flavor to traditional paella, rice dishes, soups and stews. It is a traditional tomato based sauce, but is not as sweet or intense as Italian tomato sauces. As the sofrito is prepared, the acidity of the tomatoes mellows and mingles with the onions and peppers to create a sauce that adds freshness and zing to any dish made with it.
Despensa la Nuestra is a small company located in Cordoba that was founded by a group of women when the local sugar beet factory closed. They wished to create both jobs and authentic, easy to prepare Spanish food.
